Creamy Chicken Florentine

*1 can Campbell's Condensed Cream of Mushroom with Roasted Garlic Soup
*1/2 cup water
*1 package (10 ounces) frozen cut leaf spinach
*1 can (14.5 ounces) diced tomatoes with basil and oregano
*1 1/2 pounds skinless, boneless chicken breasts cut into 1-inch cubes
*1/2 of 16-ounce package (about 3 cups) uncooked tube-shaped pasta(penne)
*1/2 cup shredded mozzarella cheese

**1. Stir the soup, water, spinach, tomatoes and chicken in a 13x9x2 (3-quart) shallow baking dish. COVER.
2. Bake at 375 degrees for 20-25 minutes. Stir. While the chicken is baking, cook the pasta according to the package directions. Drain and stir the hot cooked pasta into the dish.
3. Bake for 10 minutes more or until hot and bubbly. Sprinkle with cheese. Let stand for 5 minutes or until the cheese melts.

Its very good!!!

Taffy Apple Salad
4c. chopped apples (red & green)
MIX: 1/2c. gran. sugar
          1T. Flour
          1T. apple cider vinegar
          1 Egg (raw)
          1c. chopped peanuts
          8oz. crushed pineapple (drained)
          8oz. cool whip

Toss together apples and sauce, add cool whip. Refrigerate. Serve same day.
One of my good friends' mom gave this to me, its very good!!

~Almond Pound Cake (make as the directions say) {I used Tastefully Simple kind} then I just sliced it and crumbled it, through the layers.
~Vanilla Pudding (make as directions say)
~Fresh Strawberries
~Fresh Blueberries

And that is it! I just layered all mine together! :)

Chocolate Chip Sour Cream Muffins
Servings: 12 muffins
Ingredients
1 and 1/2 cups all-purpose flour
2/3 cup granulated sugar
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1 cup sour cream
5 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips

Instructions
1.  Preheat the oven to 350 degrees.
2.  Line one cupcake pan with liners, set aside.
3. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
4.  In another large bowl, combine the egg, sour cream, melted butter, and vanilla extract, mixing well.
5.  Add the wet ingredients to the dry ingredients and stir with a rubber spatula until just combined.
6. Gently add in the chocolate chips until thoroughly combined.
7. Evenly divide the batter among the prepared cupcake liners (I use a large ice cream scoop for this) so that the liners are about 3/4-full.
8.  Bake until a tester inserted into the center of the muffins comes out clean, about 14-18 minutes.
